Just 6 Steps to Prepare Your Avial (1 pack - 200g Avial Podi - Serves 4 to 6)
- Pour 100gms (1/2 packet) Avial Podi into a cup. Take an equal cup quanity of curd (volume measure) & mix with the Podi to make a paste.
- Take 2-2.5 kgs of cut vegetable - approx 2-inch long pieces (Snake Gourd, Brinjal, Yam Raw Mango, Pumpkin, Brinjal, Cluster Beans, Long Beans, Drumstick, Raw Banana, Snake Gourd, Carrot).
- In a vessel, boil 1.5 cups of water, with turmeric & the hard to cook vegetables like drumstick, yam, cover & steam cook for approx 10 minutes.
- Then add the other vegetables like pumpkin, brinjal & raw mango (if required add more water upto total 3 cups). When half-cooked add rock salt to taste (note the podi also has salt).
- Add the paste to the well-cooked vegetables, allow to cook again for about 5 minutes or till all the ingredients come together.
- Switch off the flame, add coconut oil, curry leaves & cover. Mix before serving with love.
