MANGAI SADAM RECIPE (Raw Mango Rice)
Serves 4
Ingredients:
Rice – 250 gms
Raw Mango (peel & grate) – 280 gms
Table Salt – 1 tbsp (adjust to taste)
Tumeric powder – ½ tsp
For the seasoning (approx. - adjust for taste):
Cooking Oil – 2 tbsp
Mustard Seeds – 1 tsp
Urad Dhal – 1 tsp
Bengal Gram – 1 tsp
Dried Red Chillies – 3 pieces
Asafoetida Powder – ½ tsp
Curry Leaves – 3 gms
Green Chilli (slit) – optional – 3 pieces

Method:
- Cook rice and set aside. The rice should be fluffy.
- Make a tadka of oil, mustard seeds, urad dhal, bengal gram, green chillies, dried red chillies, curry leaves and asafoetida powder (add last).
- Add the turmeric powder to the tadka and mix well.
- Add the grated mango, mix for a few seconds and turn off the flame. The mango should not cook.
- Fluff out the rice by hand and spread it out on a large plate. Sprinkle the salt evenly across the rice.
- Add the mango mixture to the rice and mix gently (without breaking the rice grains), till evenly combined.
- Taste and adjust for salt.
- Serve with love and Girijapaati's banana chips
