To start with these are just allowed to wallow in a pure rock salt brine for about 10 days before the spices are added. Post spicing, the pickle is allowed to rest for another ten days before Girija Paati does a taste, consistency and texture test. If the product passes the final test it is pronounced ready for distribution.
