Pavakkai (Bitter Gourd) is thinly sliced and cooked in a spice mix. The bitter gourd is then sun dried until it's dehydrated. The Pavakkai Vathal (sun-dried bitter gourd) is then fried and served as a crunchy side during meal times. Regular consumption of pavakkai or bitter gourd is thought to eliminate stomach worms and reduce blood sugar levels.
Girijapaati's grandchildren (even the ones who don't like bitter gourd) enjoy Pavakkai Vathal with sambar rice, bisibela bath or sometimes, just as a small snack by itself. Pavakkai (bitter gourd) and Thamarai (lotus stem) Vathal are often served together.
HOW TO USE:
Fry till blackish (but not burnt), serve with sambar rice or rasam rice.
