Jackfruit is the world's largest tree-borne fruit. Some fruits weigh over 30 kilograms, which is why generations of families created so many wonderful ways to enjoy every part of it.

Long before refrigerators and supermarkets, families found a place for every part of the fruit. The firm jackfruit became crisp chips. The ripe bulbs were enjoyed fresh. Seeds found their way into curries and kootus. And when there was still more fruit than anyone could eat, many homes slowly transformed it into Chakka Varatti, preserving a little taste of summer for the months ahead.

Our first story is about Theratti Paal.

For generations, Theratti Paal has been one of Tamil Nadu's most treasured sweets. Fresh cow's milk is stirred patiently over a gentle flame until it slowly transforms into a rich, creamy dessert. It is served at weddings, baby showers and on auspicious occasions, reminding us that the finest sweets cannot be rushed.

Every summer, jackfruit returns to our home—not from a supermarket, but from the trees that have stood beside our family home for years. We harvest the fruit, leave it to ripen naturally and patiently separate every golden bulb by hand.

One summer in our kitchen, while Theratti Paal was slowly thickening over the stove, someone looked at a bowl of perfectly ripe jackfruit and wondered...
