Nei Appam is a delicious jaggery-based sweet, rice cake that's fried in ghee and hence the name. It combines the yumminess of coconut, banana, jaggery and cardamom to create a bite-sized dessert that will have you popping it in by the dozen.

Girijapaati's Nei Appam recipe is so simple to make, you won't believe it till you try it.

Serves 4

Ingredients:

  • Raw Rice - 250gms
  • Jaggery - 125gms
  • Coconut - finely chopped - 35 gms
  • Banana - 150 gms - 2 small bananas
  • Cardamom - 10 pods
  • Ghee - to fry
  • Water - as required

Method:

  1. Soak raw rice in water for about 30 minutes and then grind to a fine batter.
  2. Break up the banana into large chunks and add it into the batter, along with jaggery and blend.
  3. Crush cardamom seeds with the skin and add, along with the coconut. Mix well, till evenly combined.
  4. Add ghee into each of the cups in the appam pan.
  5. Once the ghee is hot, drop a ladle of batter into each cup.
  6. When the appams are half cooked, flip over and allow to cook evenly on the other side.
  7. Remove from the pan and serve with love.
