Girija Paati’s lime pickle is different from any other lime pickle you will find. She uses a 100-year-old family recipe where the lemons are just allowed to marinate in a pure rock salt turmeric brine for about 10 days before the spices are added. Post spicing, the pickle is allowed to rest for another ten days before Girija Paati does a taste, consistency and texture test.
