Crisp, filled with lentils, Girijapaati's Paruppu Vadai is a must have for Pongal or any day when you are craving an indulgent and nutritious snack.
Perfect with a festive meal like Pongal or with a hot cup of ginger tea at 4pm on a rainy day. It's filled wtih protein and flavour.
Serves 4
Ingredients
* Thoor Dhal - 110 gms
* Bengal Gram - 130 gms
* Urad Dhal - 15 gms
* Asafoetida - 2-3 gms (taste based)
* Dried Red Chillies - 15 gms
* Curry Leaves (chopped) - to taste
* Salt - 15 gms
* Water as required
* Oil for frying
Method:
1. Soak all the lentils together in 2 & 3/4 cups of water for 30-45 mins.
2. Soak the chillies, asafoetida, and salt in a ladle of water as well.
3. Set aside about a tablespoon of the soaked lentils.
4. Grind the remaining lentils and soaked spice mix together into a coarse batter.
5. Add the whole lentils and the chopped curry leaves to the coarse batter.
6. Heat oil in a kadai, wet your palm lightly, make little pats of the batter in your palm and then deep fry into golden-brown vadais.
7. Serve hot, serve with love.
