When you bite into a crunchy little piece of Uppu Cheddai, the flavour that explodes in your mouth is a surprise. This deceptively simple savoury requires a lot of patience and a detailed, multi-step process that starts with the method of washing the rice, which is then partially air dried before being wet-ground and then seasoned, before being laboriously hand-rolled into grape sized rounds and finally fried. Making this for a huge joint family is truly a labour of love and many a times a great family activity too.
Traditionally made for the festival of Krishna Jayanthi (Janmashtami) this is one buttery, crispy karam that the whole family will enjoy with their filter coffee.
