Thattai is a uniquely south Indian snack that few people north of the Vindyas are even aware of. Using a base of traditional rice flour, Girija Paati’s thattai is a complete meal on its own, with proteins from bengal gram, protective vitamins from the curry leaves and a taste punch from the red chillies, all of which are balanced out by the digestive powers of asafoetida.
